Peaches were looking good at the market so I threw this together.
Ingredients
- 125 grams ricotta
- 1/2 peach
- 1 teaspoon honey
- 100 grams buffalo mozzarella
- 1 tbs crushed pistachios
- 1 tsp olive oil
- 245 gram Napoli dough ball
Steps
- Begin by pressing out your crust on a flat surface.
- Lightly coat the crust with a drizzle of olive oil.
- Spread the ricotta cheese evenly over the crust.
- Drizzle the honey on top of the ricotta cheese.
- Next, add the sliced peaches on top of the ricotta and honey.
- Distribute the buffalo mozzarella evenly across the pizza.
- Preheat your oven to its highest temperature, and put your pizza in to bake on a pizza stone (my oven gets to about 250C)
- When there are about one or two minutes of baking time left, sprinkle the crushed pistachios over the pizza and return to oven.
- Finally, remove the pizza from the oven and let it rest for a minute or two before you start slicing and serving it. Don’t forget to garnish with fresh basil leaves!
