So, I boot to recovery (twrp) and search the directories to find the apps I don’t want and delete em.
If this is the way to go, could you tell me in what directories do I find these apps?
If this is not the right way, what is it then?

This is the way.
I’ve used it on non-rooted devices, lots of testing. I can break a phone with it, then restore the broken functionality with it.

Inside the system partition, in the SYSTEM/app and SYSTEM/priv-app folders.

There are a few ways to uninstall apps, you can uninstall through adb, though it won’t be permanent. Or you can uninstall through TWRP like you’re doing now, by hand or using a flashable script (prefer aroma zips as they allow finer grained control over the apps deleted).
You also can root your device and uninstall with a root file explorer, or install a custom ROM with baked in root support.
And a bit off topic, but why do you make so many posts instead of a single one with your intended goal for the device? You know you can keep discussing in the same thread right?
